Ingredients:
- 1 chopped onion
- 3 cloves garlic
- 1 tsp chopped ginger
- 2 tsp chopped fresh turmeric
- Black pepper
- 1 carrot
- 4 tbsp of cooked lentils
- 1 zucchini, chopped
- 1 cup of chopped pumpkin
- ½ head of broccoli
- 1 red capsicum
- 1 yellow capsicum
- 1 ½ cup coconut cream
- Parsley to serve
Method:
- Saute onion and garlic in a pan.
- Add vegetables and coconut cream with spices and cook for 20 minutes until the veggies are done.
- Serve with brown rice or noodles. Enjoy!
