Thai veggies

Ingredients:

  • 1 chopped onion
  • 3 cloves garlic
  • 1 tsp chopped ginger
  • 2 tsp chopped fresh turmeric
  • Black pepper
  • 1 carrot
  • 4 tbsp of cooked lentils
  • 1 zucchini, chopped
  • 1 cup of chopped pumpkin
  • ½ head of broccoli
  • 1 red capsicum
  • 1 yellow capsicum
  • 1 ½ cup coconut cream
  • Parsley to serve

Method:

  1. Saute onion and garlic in a pan.
  2. Add vegetables and coconut cream with spices and cook for 20 minutes until the veggies are done.
  3. Serve with brown rice or noodles. Enjoy!
