Veggie Fajitas

Serve: 4


For scrambled tofu:

  • 1 cup of firm tofu
  • 1 tbsp extra virgin olive oil
  • 1 teaspoon of turmeric powder
  • A pinch of Himalayan salt
  • ground black pepper

For the fajitas:

  • 4 tortillas
  • chopped red onion
  • chopped red cabbage
  • grated carrot
  • avocado sliced

Homemade tomato sauce

Vegan Mayonnaise

  • 1 cup not refined sunflower oil
  • 1 cup of soymilk
  • 2 tsp apple cider vinegar
  • sea salt to taste


Fort he mayonnaise:

Put all the ingredients of the mayonnaise in the blender. Place the blender in the bottom and blend on medium speed until it emulsifies. Then you can make movements from below upwards until everything is well mixed.

Fort he scrambled tofu:

  1. Cut the tofu and crush it with the help of a fork until you have a texture similar to scrambled eggs.
  2. In a pan take a drizzle of olive oil and when it is hot add tofu, salt, turmeric and black pepper.
  3. Cook for about 10 minutes, stirring occasionally.

For the fajitas:

  1. Warm tortillas in a skillet.
  2. Put the ingredients in rows (vegetables, scrambled tofu, avocado and sauce) and close the fajita. Repeat the process with. Enjoy!

Note: you can substitute tofu for meat or chicken.
